Where does the tradition of eating Sufganiyot (Jelly Donuts) come from?

The tradition nowadays is to eat sufganiyot that are fried in oil on Hanukah to remind us of the miracle that occurred with oil. The oldest source is brought in the name of Rabeynu Maimon the father of the Rambam (circa 1150, almost 900 years ago), that the minhag is an ancient custom that one should not be lenient with.
